Ingredients 225g softened butter 225g light muscovado sugar 3 large eggs 100g chopped walnuts 100g sultanas 225g self-raising flour 2 tsp baking powder 1 tsp ground cinnamon 400g cooking apples, peeled, cored and grated To finish: light muscovado sugar chopped walnuts icing sugar Method: Preheat oven to fan 160°C / 180°C / Gas 4 and grease and line a 23cm deep round cake tin. Beat the butter, sugar, eggs, flour and baking powder until thoroughly blended and mix in the chopped walnuts and sultanas. Spoon half the mixture into prepared tin, spread grated apple and ground cinnamon in an even layer. Spoon the remaining cake mixture on top then sprinkle with light muscovado sugar and chopped walnuts. Bake for 1 1/4 - 1 1/2 hours until well risen and golden. Dust with icing sugar. |
