Honey Cherry Cake
112g (4oz) butter, 225g (8oz) honey,2 eggs, beaten, 225g(8oz) self raising flour,112g (4oz) glacé cherries
Cream together the butter and honey until light and fluffy. Add the beaten eggs a little at a time and mix well. Fold in the flour and cherries. Turn into a 180mm (7 inch) greased and lined cake tin. Bake at 170 degC, GM 3 for about 45 minutes or until a skewer comes out clean. Turn out onto a wire rack to cool. Display on a white paper plate with a doily, covered with polythene or cling film.
