Honey & Ginger Cake
115g/4 oz butter, 115g/ 4oz honey, 283g/10oz plain flour , 2 eggs size 2, 170g/6oz brown sugar, 1tsp bicarb, 3tsp ginger, 1 tsp cinnamon, 50g/2oz golden syrup, 2tbsp milk
Method: Sift dry ingredients into a bowl. Melt honey butter, sugar, syrup and milk until runny. Beat the eggs. Add the liquid then the eggs to the flour. Pour into 2lb loaf tin. Bake at Gas 2-3 / 160°C for 75-90minutes. Cook until just firm; cool in the tin. Turn out and glaze with honey while still warm. To be displayed on a white paper plate with a doily covered with clear polythene or cling film.
