Plum and Almond Cake
Ingredients

150g Self Raising Flour
100g ground almonds
175g butter, softened and cut into cubes
150g golden caster sugar
3 Eggs, beaten
1 tsp almond extract
300g plums, stones removed and chopped

For the topping:
6 tbsp. plum Jam
3 ripe plums, stoned and cut into wedges
Toasted Faked Almonds

Method

Preheat oven to 160°C / Gas Mark 3. Grease and line 900g loaf tin. Place flour and almonds in bowl and add butter, sugar, eggs and almond extract. Beat ingredients together until pale and fluffy. Add the chopped plums and stir until evenly mixed. Spoon cake mix into prepared tin and bake for 1¼ - 1½ hours or until cooked. Turn on to wire rack and cool. For the topping: warm the jam and sieve it then brush the sieved jam generously over the top of the cake. Arrange the plum wedges and brush again with jam. Scatter the toasted almonds over.
